How to prepare for a food safety audit without creating last-minute chaos.

Audits go better when evidence is already organized, responsibilities are clear, and the team knows how to answer questions confidently. The job is mostly preparation, not panic.

1. Start with the records that matter

Review sanitation logs, traceability samples, training records, supplier approvals, complaint records, and corrective actions. If a record is missing, decide whether to rebuild it or document the gap honestly.

2. Make one owner responsible for each area

Audits move faster when each zone has a clear owner. Production, quality, procurement, and maintenance should know exactly which documents they need to provide.

3. Practice the walkthrough

Walk the facility in the same order an auditor would use. A rehearsal helps the team find broken links between procedures and actual practice.
